Making Cheescake

... is a messy business. Or at least I found it to be so today! 4th of July also happens to be a good friend's birthday and he likes cheesecake. I decided to make Smitten Kitchen's recipe for New York Cheesecake with a cherry topping. Overall, although there are many steps and it took about 4 hours, the recipe comes together pretty easily. A few notes: I baked the cake for nearly two hours, which was too long and the crust was slightly burned. It just seemed too jiggly but I guess it wasn't. I burned the cherries the first time around too, so watch them carefully. Recipe here.
